Chocolate Pound Cake

Ingredients

1½ cups unsalted butter, softened
3 cups sugar
2 tsp. pure vanilla extract
5 large eggs
1 cup unsweetened cocoa powder
2 cups all-purpose flour
½ tsp. baking powder
½ tsp. salt
1 cup buttermilk
¼ cup water

Instructions

In large mixing bowl, cream together butter and sugar. Beat at high speed for 5 minutes, then add vanilla. Add eggs, one at a time, beating well after each. In separate bowl, mix together cocoa, flour, baking powder and salt. Add dry ingredients alternately with buttermilk and water, ending with dry ingredients. Mix until well blended. Pour into greased and floured 10 inch tube pan and bake at 325 degrees for 60-75 minutes or until a wooden pick inserted in center comes out clean. Let cake rest in pan for 20 minutes, then turn onto cake rack. Cool completely before serving.
Decorate with chocolate dipped almonds, sweetened whipped cream, or sprinkle with powdered sugar. Serve with ice cream or dip squares in white chocolate fondue.
