Confetti Bars

Ingredients

½ cup butter room temperature
½ cup white sugar
¼ cup + 1 Tbsp. brown sugar packed
1 large egg room temperature
1 tsp. vanilla
1½ cups flour
½ tsp. baking soda
1 tsp. baking powder
½ tsp. cornstarch
¼ tsp. salt
1¼ cups vanilla chips, divided
3 cups mini marshmallows
¾ cup spring M&Ms
3 Tbsp. sprinkles – spring colored

Instructions

Preheat oven to 350. Combine butter and sugars together in medium bowl using mixer until light and fluffy. Mix in the egg and vanilla just until incorporated.
In a separate bowl, combine flour, baking soda, baking powder, cornstarch, and salt. Stir together slowly and add dry ingredients to wet ingredients. Mix until combined. With a wooden spoon, stir in one cup of vanilla chips. Press cookie dough into a 9 X 13 pan sprayed with PAM.
Bake for 17-22 minutes or until edges are lightly browned. Remove and immediately top with mini marshmallows and M&Ms. Return to oven 1-2 minutes until marshmallows are puffy. Remove from oven and sprinkle ¼ cup vanilla chips and sprinkles. Cool completely then cut with a wet knife.
