Five Fruit Pie

2 prepared pie crust
1½ cups sugar
5 Tbsp. cornstarch
1 cup chopped, peeled tart apples
1 cup chopped fresh or frozen rhubarb
1 cup fresh or frozen blueberries
1 cup fresh or frozen strawberries
1 cup raspberries
2 Tbsp. butter
In a large bowl, combine the sugar, cornstarch and fruit. Transfer one pie pastry to pie pan.
Pour filling in crust and dot with butter. Top with the other pastry, seal and flute. Slit top crust and sprinkle with sugar. Bake at 400 for 45 to 55 minutes, covering with foil for first 35 to 40 minutes.
Remove foil and bake until crust is golden brown.
(The fruits you choose for this pie are flexible. I use peaches and cherries with wonderful results.)
