Holiday Spice Cake

Ingredients

3 cups sugar
1 cup oil
3 eggs
1 cup applesauce
1 cup pumpkin (not pie mix)
3 cups flour
½ tsp. salt
½ tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. cloves
½ tsp. nutmeg
1½ cups raisins
1½ cups chopped pecans

Glaze: 1 cup powdered sugar, ½ teaspoon maple extract, and 2 Tablespoons water

Instructions

Cream sugar and oil. Add eggs, one at a time, beating well after each addition.
Add applesauce and pumpkin.
In a separate bowl, combine dry ingredients. Add to egg mixture a little at a time, beating well. Stir in raisins and pecans. Pour batter into a greased angel food cake pan with waxed paper in the bottom. Bake at 350 for 1 hour and 20 minutes on bottom rack of oven. Cool at least 15 minutes and remove from pan.
Make glaze – Sift powdered sugar and stir in maple extract and water. Pour over cake.
