Pumpkin Coffee Cake

Ingredients

Cake:
2 cups all-purpose flour
2½ teaspoons baking powder
¾ brown sugar, packed
1 Tablespoon pumpkin pie spice
¼ cup butter, softened
1 cup pumpkin puree
½ cup milk
1 large egg

Streusel topping:
¾ cup brown sugar, packed
½ cup all-purpose flour
4 Tablespoons butter softened
½ teaspoon pumpkin pie spice
½ cup chopped pecans, optional

Instructions

Preheat oven to 350 degrees. Spray a 9 x 9 pan with nonstick cooking spray.
In a medium bowl, combine flour, baking powder, and pumpkin pie spice. Set aside.
In a separate bowl, cream butter and brown sugar. Mix in pumpkin, milk and egg.
Add dry ingredients and mix just until blended. Spoon into pan.
Prepare streusel: Combine the brown sugar, flour, butter and pumpkin pie spice with a pastry blender or fork. Add pecans if desired. Sprinkle topping evenly all over coffee cake batter.
Bake for about 45-50 minutes or until a toothpick comes out clean. Serve with a dollop of whipped topping if desired.
