¼ cup butter
1 lb. asparagus, peeled and cut into 2” pieces
¼ tsp. salt
1 bunch green onions, tops only, chopped
Grated zest of 1 lemon
24-28 large shrimp, peeled & deveined
1-2 Tbsp. dry sherry or broth
Melt butter in skillet or wok. Toss asparagus in butter and sprinkle with salt.
Cover and cook over low heat 4-5 minutes. Add green onion tops, lemon zest, shrimp, and sherry.
Cook 3-4 minutes or until shrimp are just done.
